Ingredients & Preparation

To make the caprese pizza dough, you will need flour, warm water, yeast, sugar, and salt. The toppings are, of course, a ball of white mozzarella, tomatoes and basil leaves, as well as grated yellow mozzarella, sour cream, sea salt, freshly ground black pepper, dried oregano and onion cut into feathers. The sauce is made from tomato passata, salt and pepper, sugar, oregano and olive oil. The first step is to make a yeast solution – add crushed yeast, 1 teaspoon of sugar and 1 teaspoon of flour to warm water, mix. The solution should be covered with a folded cloth, the yeast needs time to start working (about 5 minutes). Meanwhile, sift the flour onto a pastry board or into a large bowl and make a well in the middle, then gradually pour the dissolved yeast into it, stirring gently with a spoon, add the olive oil and stir constantly. Once the ingredients have been initially combined, you can start kneading the dough on a pastry board, add salt and knead for about 10 minutes until smooth, soft and elastic. The next step is to shape the dough into a ball, brush it with olive oil and transfer it to a larger bowl. Cover the bowl with a cloth and leave to rise in a warm place until doubled in size for about 1 hour. During this time, you can prepare the toppings and tomato sauce – pour the tomato puree into a saucepan, season with salt, pepper, sugar, oregano and olive oil, cook for 10 minutes. The risen dough is kneaded for a while on a pastry board and placed on a baking tray greased with olive oil. It should continue to rise for about half an hour. The oven should then be preheated to the maximum temperature (usually 250 degrees Celsius). Before baking, the toppings are spread on the pizza (so that they do not overlap the edges). The baking time is 15-20 minutes, the edges and bottom need to brown nicely. The white mozzarella should be added at the end of baking. After removing from the oven, the pie is sprinkled with basil.
