Convince yourself to … Campania

Authentic Neapolitan pizza must have a thin dough and the smell of fresh bread, it also generally does not contain many ingredients, and yet it delights with its distinct taste. Neapolitan pizza was an inspiration to create many different variants of this dish, which often differ significantly from the original. They contain many sophisticated additives and are made on a thicker dough.

Pizza unlike any other?

Originally, every Neapolitan pizza has a similar source. Tomatoes were brought to Europe in the 16th century by explorers returning from Peru, but at that time Europeans believed that tomatoes were poisonous, and it was only from the end of the 18th century that poor peasants in Naples began to pour them on bread. This is how the dish gained popularity. Baker Raffaele Esposito, who worked in a pizzeria in Naples, is widely credited with being the creator of Margherita pizza. It all happened in 1889, when King Umberto I and Queen Margherita of Savoy visited Naples. The baker created a dish named in her honor of the queen, which symbolized the colors of the Italian flag: red (tomatoes), white (mozzarella) and green (basil leaves).

This classic quickly gained popularity and prompted the enrichment of pizza with more toppings. Campania pizza also contains a distinct flavor of Parmesan cheese, as well as one of the most recognizable Italian culinary products – salsiccia, i.e. matured pork sausage. It is therefore a pie that reflects the fullness of Italian, traditional flavors. To enjoy it at home, it is worth ordering Neapolitan pizza with delivery from our restaurant.

Ingredients and preparation

According to the specifications proposed by the True Neapolitan Pizza Association, it must be made from risen dough that has undergone a aging process. The dough consists of water, original Italian flour (so-called farina, type 00), a little yeast and sea salt, the dough must mature for 24 – 48 hours, and the formation of the pancakes is done only by hand, using a special technique that allows the air to be pushed out from the center to the edges, thanks to which the pizza will rise and fluffy. Authentic Neapolitan pizza is formed by hand without the help of a rolling pin or mechanical presses, and its thickness does not exceed 3 millimeters. It is baked in an artisanal oven, at a temperature of 485 degrees Celsius. The baking time must not exceed 60-90 seconds.

Originally, the best pizza in Larnaca is made using San Marzano tomatoes from Italy and one of two types of mozzarella cheese – fior di latte made from cow’s milk or mozzarella di Bufala made from water buffalo’s milk. Olive oil must be extra virgin. The ingredients must be completely natural and fresh. On top of the Campania pizza is, of course, aromatic basil. Salsiccia is a traditional Italian sausage that can vary a bit from region to region. It is made from a mixture of lean and fatty meat, e.g. pork, beef or horse, which is seasoned and transferred to a natural pork or mutton casing. Parmesan cheese, on the other hand, is a hard cheese made from cow’s milk with a high salt content. It is sometimes called the king of cheese. The beginnings of its production date back to the Middle Ages (around the 12th century), when the first cheese factories appeared in Benedictine and Cistercian monasteries in Parma and Reggio Emilia. Worth the sin…?

It is estimated that Margherita pizza has about 220-230 kcal, so you should also add the calorie content of Parmesan cheese and salsiccia. It must be taken into account that Parmesan cheese is not added much, so the value of 431 kcal in 100 grams should not be scary.
