The baker created a dish named in her honor of the queen, which symbolized the colors of the Italian flag: red (tomatoes), white (mozzarella) and green (basil leaves).

Ingredients and preparation

According to the specifications proposed by the True Neapolitan Pizza Association, it must be made from risen dough that has undergone a aging process. The dough consists of water, original Italian flour (so-called farina, type 00), a little yeast and sea salt, the dough must mature for 24 – 48 hours, and the formation of the pancakes is done only by hand, using a special technique that allows the air to be pushed out from the center to the edges, thanks to which the pizza will rise and fluffy. Authentic Neapolitan pizza is formed by hand without the help of a rolling pin or mechanical presses, and its thickness does not exceed 3 millimeters. It is baked in an artisanal oven, at a temperature of 485 degrees Celsius. The baking time must not exceed 60-90 seconds.

Originally, the best pizza in Larnaca is made using San Marzano tomatoes from Italy and one of two types of mozzarella cheese – fior di latte made from cow’s milk or mozzarella di Bufala made from water buffalo’s milk.
